finally....recipe #3

This one was good for leftovers...because I tend to have leftover chicken and rice quite often.

I use approximates...so here goes...

1 cup of brown rice (cooled) (probably could be white??)
Leftover chicken
Celery
Water chestnuts
Green Onion
Red Pepper
Green Pepper
Peas

Mix together with dressing and refrigerate overnight.

Dressing-
2 T oil
3T lemon juice
3T soya sauce
1T fresh ginger chopped
1T teriyaki sauce
salt / pepper

It was yummy for lunches the next day...although it might have been missing a little something (DH put Franks hot sauce on it...but he puts it on most things)...not sure what...but if you figure it out, let me know as I think we'll make this one again.

ROAD TRIP!!

Anyone want to go to Moose Jaw? They have had a ridiculously large number of winners come from that town.

Today I heard that the 17million was won there as well.

I cant remember ever being in MooseJaw...but if you are going...please buy me a ticket....

Sorry for not posting more regularly. Seriously have stuff on my brain and no amount of deep breathing (or red wine, apparently) can get out of there.

Its not that I worry as much as Velvis...but I do my fair share (probably because DH doesnt worry much at all).

Here are a few things that we've been up to.

C-man lost another tooth...this time the tooth fairy remembered the money-but not to take the tooth. (pretty common that the tooth fairy cant find the damn thing!).

Retzky has come to the conclusion that a big fat bunny does not deliver things to peoples houses, nor does a big fat guy in a red suit....and highly unlikely that there is such a thing as a tooth fairy. Being the good big brother he has agreed not to tell C-man. At least for now. I'm sure when they are beating the snot out of each other, it might come in handy.

DH has been working mostly in the yard with weekends off, which has been EXTREMELY nice. We have been having suppers together, cleaning up afterwards and spending family time. WOW...thats something right there. When I say mostly, there has been the odd trip thrown in here and there, just to keep him on his toes. Of course, this is all changing this weekend and will probably be back to no schedule whatsoever. Back to being the Railroad Widow. But I wont complain...at least he is working....bringing home the bacon.

Even though hockey is "over"....the boys had some extra ice time last night, and again on thursday. There are a few of them that want to keep on the ice as they have one kind of tryout or another coming up.

C and I are staying home this morning...as we both arent feeling 100%...so we're going to try to rest up and get better.

3 new recipes

Tried two new recipes this week...and both were quite tasty...about to try a 3rd tonight....

Man...I feel as exotic as the Fujis!! tee hee

Ok...mine are mostly soup and crackers...definitely not as exotic as the Fujis...

Recipe #1

4 chicken breasts
1 can of cream of chicken soup (i used low fat)
Shredded swiss cheese
Stove top stuffing (i used low sodium)

Make up the stuffing according to directions. Then layer chicken/soup/cheese/stuffing. Cook in oven at 400 for 40 minutes. (or depending on your chicken breast size...) Yummy!!

Recipe #2

3 tablespoons butter
1 onion, finely chopped
2 tablespoons all-purpose flour
Garlic
2 cups skim milk
1/2 cup grated Romano cheese
Salt/pepper
1 cup frozen green peas
10 ounces smoked salmon, (I used cooked salmon fillets)
1 (16 ounce) package penne pasta

Cook pasta. While thats cooking, in a saucepan saute butter, onion, garlic. Stir in flour, gradually stir in milk. Put in cheese and peas (rhymes!!) Toss in salmon cook for a couple of minutes.

(Recipe didnt call for it...but when I cooked the salmon, used lemon juice and lemon dilly spice from epicure...also added a little lemon juice to the sauce)....

Its friday!!

Just finished parent teacher interviews. Really glad that my kids leave their pitchforks at the door when they head off to school, as the teachers had nothing but praise for them.

Some of C-mans grades have come up 10 percentage points!! His teacher was glowing. Says he is the first to answer questions (and answers correctly in french), his writing is incredibly neat and is a strong leader. Glowing words...

Retzkys teacher shaved for the interview which was nice ...(but still couldnt stop staring at the shaving rash...uuggghhh) ..and it took all of 30 seconds to tell me that he was a great kid and eager to please.

I am heading off to work now as the boys are at Darren and Louises today to drive him crazy. Now I'm sure they have left their halos behind....

tuesday, not too mucb going on.

Happy St Paddys day everybody!! Although there will be no green beer for us today, we are all clad in our green outfits. How about you?

Not much new to report, although with the winding down of hockey we are already finding more free time.

Last night, the kids (that includes DH) spent about 2.5 hours on the backyard rink, while I cleaned and read. They had a hoot....I had quiet. Tonight should be much of the same. Except Retzky and I have to get to work on a school project that is due next week. The instructions are vague at best, so we will see what we come up with.

We are headed to another dr appointment first thing this morning, then I'm off to a realtors luncheon for hot topics I'm sure...so the day will be almost over before I have to get working.....

Best games BY FAR yesterday

Hockey hockey hockey....the countdown is officially on now.

C-mans game was incredible yesterday. I have never seen him play sooo good in all my rink filled life. I showed up a few minutes late (not my fault...) and C had already scored his three goals (against a team that we have not beat this year). Apparently from what I hear they were amazing goals....roofa daddies...(like the McD's commercials). We were up 5-1...then ended up winning 6-5. It was a barn burner. And proud parents we were..

Retzky played a Tier 2 team from the city. We got off to a great start with a 2-0 lead and R scored them both. They were beautiful hard shots and great plays. He played hard, on his feet and REALLY aggressive. (Almost too much so, and we had to have a big talk with him last night). We ended up losing 4-3...which was too bad. Our poor goalie let in one really weak one, and one he should have had....because he played exceptionally well the whole rest of the game. I think he wishes he could have them back.

Today...I have to miss Retzkys game (Game 2 vs the city team) because C-mans game is at the same time, different rink.

What a beautiful night to ski. The weather couldnt have been better. The hill wasnt that busy at all. The whole fam dam went to Table Mountain for Friday night ski from 6:30-9:30. Louise and her clan came along as well..
I ended up not taking a lot of pictures....I forgot how short the runs are compared to the mountain...so by the time we got up, we were already down....but here are a few..
Of course an hour after we were there...the kids were STARVING to death. (Even though they had a huge supper)....
C-man was a natural...except for the odd time he wiped out...he just couldnt figure out how to get back up. Retzky was a little more cautious, but did very well.
We're hoping to get out a couple more times as the hill closes the end of the month.

all about R-dog

Yesterday R-dog and I made a quick trip to the city.

We snuck in a bit early as he is DESPERATE for clothes. (You know...the ones without holes, that arent two inches too short??) So we headed to Old Navy. We picked up 7 shirts, a pair of jeans and a football (for C-man) for $55. Good deals....and he wouldnt let me look for anything girlie. Not allowed. boo

Then we had a quick visit with Grandma and Grandpa Golfer...we havent seen them for a very long time and it was a nice visit.

After the visit....we went to the Ear Dr appt. I guess he has some kind of a pollop (sp?) which he thinks was caused when his ear drum got wet. Once its wet it can develop cracks (sorta like when your hands are in water too long) and some kind of virus got in there and created some kind of pimply thing. We are on ear drops, then have to go back in three weeks. If it has not got better, we will have to have a day surgery to remove it. Once its removed, then he can tell if there was any damage to the ear drum.

All in all, it was a great day for just the two of us. He didnt act out , I didnt get mad or frustrated. He tried new things, we had adult conversation and he even let me go to Costco. (of course we had to look at things only for him...hahaha) It was nice.

I'll let you know how the ear thing progresses....

boy crazy

Or, boy, am I crazy?

Instead of having one friend over today (with no school)...we now have 3 extra...yes I said THREE EXTRA.

With the weather being -41 today with the windchill, outside time has been pretty limited.

Seriously questioning my sanity at this point.

No one has ended up in the hospital yet....but I could be checking myself in shortly.

(It actually hasnt been bad at all....yet....)

name changes ...???

Yesterday Retzky told me that the teacher might be calling me. hmmmm.???

He tells me that instead of writing his name on top of the paper...he writes the name "Jason". Why?? He tells me that he just likes the name Jason. hmmmm???

This morning C-man tells me that he doesnt want his last name anymore. He wants his last name to be .....Ovechkin. Even though he can hardly pronounce it, not sure how he is going to spell it.

Unfortunatley, he didnt play like Ovechkin this morning and we lost 9-6. He played defence and scored one-really pretty top corner-goal. They were missing a few players and by the third period really lost steam.. That and he cant stop staring at grandpa in the stands. Whats he going to do when the girls start coming to watch?

Retzky plays this afternoon at 4:30 and their team is really extra short players today (they usually have 8 or 9...today we will be lucky if we have 7 skaters...)

im sorry!!!

I really did it this time and I apologize.

Yesterday - being the springy day that it was - I had thoughts of warm weather dancing in my head.

I thought about organizing and putting away some of the winter gear (mistake number 1)

I also went out and purchase a cute little pair of spring/summer shoes...on sale (mistake number 2)

I never meant for this to happen. I couldnt predict that we would be under the blizzard warnings again. Really terribly sorry....now I wont put away ANY winter stuff until its good and warm.

Thanks Auntie Velvis...for making my tight budget a little easier to deal with...

I was able to finagle (is that a real word?) a couple new purses from her. (New to me). And trust me...if I was left to my own vices...I would spend all my money on shoes and purses. As it is now...I spend on groceries. All of my extra money goes to groceries. lovely

I have no problem taking left overs of any sort. In fact, this week, I also got some hand-me-downs from Louise. Only a few fit...but still pretty decent haul, until I get the rest of this weight gone.

Now...if only I can find someone whose feet have shrunk considerably and needs to get rid of hundreds of shoes......

(oh yeah, Velvis....I've had tonnes of compliments....thanks again!)

lordy lordy...

Well....for the first time in a very long time I got asked to play volleyball.

I was pretty excited when Dad said he would come up to babysit and give me the day with the girls. (As it turned out DH was home...but how do you know, right?)

Our day started with our first game at 9:30. The set went three games and we ended up losing...but it was a close one. We did manage to win the next two sets. All in all we played 13 games (it sounds like more when I say it that way...instead of 5 sets).

Trust me when I tell you that the last 3 games were not pretty. The mantra going over and over in my head was this "just get the ball over.....just get the ball over".....then "please god dont let this match go 3 games.....please god.....". My head wanted to play well....but the old legs/arms/abs/feet just didnt listen.

After it was all over with...the boys were "generous" enough to let me go out for drinks. This was the first time in IONS (sp?) that I have gone ..."out" out. We had supper and a few beverages, but I couldnt pull a late shift. My body was SCREAMING for a hot shower and the bed at 10:30. I know...10:30 used to be when I left to go to the bar.....not come home.....very lame.

Sunday was a complete write off. DH thought he was going to have to "rescue" me from the toilet about a half dozen times. There was moaning and groaning than a p*$n movie....

Today... I thought it was getting better.....but sitting at a desk for hours at a time....does not help. I am going to try to get on the treadmill and do a crazy amount of stretching to see if it helps.

I have already said I would do it again next year....anyone feel like helping me train??
